Chopped Herring Salad with Potatoes and Apples
- 1 320 gram/12 oz. jar of Feature Foods Herring in Wine Marinade, drained and onions removed
- ½ raw red onion, sliced
- 3 slices brown bread, crusts removed, soaked in water and squeezed very dry
- 1 lg. apple, peeled, cored and diced
- 1 boiled potato, peeled and diced
- Salt and pepper to taste
In a grinder or food processor, chop and mix first 5 ingredients. Season to taste with salt and pepper. Chill and serve over lettuce or as a spread.
