Northern European Herring Salad

  • 1 600 gram/26 oz. jar of Feature Foods Herring in Wine Marinade, drained, onions remover, and diced
  • 1 16 oz. jar pickled beets, diced, liquid reserved
  • 2 apples, peeled, cored and diced
  • 1 large potato, boiled and diced
  • Capers to taste (optional)
  • Chopped pickles to taste
  • Salt and pepper to taste
  • 2 eggs, hardboiled and diced

Combine all ingredients except eggs.  Add enough beet juice to reach desired consistency.  Note: potatoes will absorb some of the juice.  Cover and let stand in refrigerator for 1 day to allow the flavors to blend.  Adjust salt and pepper if necessary.  Sprinkle with diced egg when ready to serve.
