Herring Salad with Sour Cream Sauce
Sour Cream Sauce:
1 c. low fat sour cream
½ c. low fat plain yogurt
½ lemon, juice only
¼ tsp. sugar
- 1 200 gram/8 oz. of Feature Foods Herring in Wine Marinade, drained and onions removed
2 sm. onions, peeled and thinly sliced
2 med. Tart apples, peeled, cored, and cut into thin wedges
2 tsp. fresh dill or ½ tsp. dried
Combine sauce ingredients and mix well. Add onion slices and apple wedges to sauce and mix well.
In a dish layer herring and apple-onion mixture. Cover tightly and refrigerate for 4-6 hours. Sprinkle with dill before serving.
